Nelum Ala Salada (Lotus Root Salad)

 

INGREDIENT
1 lb Lotus root, peeled and sliced
1 red onion
1 green chillie (optional)
2-3 tomatoes
3 tbsp coconut milk
Salt
Pepper
 
METHOD

Cook the sliced lotus root in water for about 3-5 minutes. Drain, wash in cold water.
Slice the onion and the tomato and add to a bowl. Next chop the green chillie in to very small pieces add to the bowl. Add coconut milk and lotus root. Add salt and pepper to taste.
Mix and serve immediately.
This goes well with rice and curry.
